Precision health is emerging as a major investment opportunity, with technologies ranging from GLP-1 care and biosensors to personalized nutrition and AI-driven preventive medicine. According to AgFunderNews, Cornucopian Capital, led by founder and managing partner Aryeh Ganz, is building an investment strategy focused on commercializing university research and scaling technologies that could make personalized healthcare more accessible.

The New Jersey-based investment firm, founded in 2020, has invested more than $30 million over five years and focuses on companies that can move healthcare from treating diseases toward a more predictive and preventative model.

Ganz argues that the key is not simply developing sophisticated health technologies, but ensuring that they can reach a broad consumer base. “For us, it’s about identifying a technology that can scale and be accessible from day one,” he told AgFunderNews.

The firm's strategy spans several areas, including GLP-1 care, biosensing, personalized nutrition, digital health and novel bioactives. Its investment model begins as early as pre-seed and seed stages and can extend through Series A rounds.

At the Series A stage, Cornucopian typically invests between $5 million and $8 million, while initial investments at the pre-seed and seed stages generally start at around $500,000.

Unlike traditional venture capital funds, Cornucopian operates through a consortium of family offices and a special purpose vehicle structure. This allows the firm to take a longer-term approach to investments.

“We’ve got different timelines because we’ve got no fund structure so we’re able to be a lot more patient, which I think in this sector is very important,” Ganz explained.

The firm also works directly with universities to identify technologies that could become new companies. Its relationships include UC Davis, UC San Diego and the New Jersey Institute of Technology, among other academic institutions.

At UC Davis, Cornucopian has worked with the Barnstorm Foundry, an entity focused on creating companies from academic research. Ganz said the collaboration has resulted in about a dozen research projects and three companies emerging from that work.

The commercialization process follows a structured approach. The firm evaluates the scientific technology, intellectual property, potential founders, market opportunity and the ability to move a project from the university environment into a company.

“We’ve developed a playbook, a framework, which is a stage by stage, go, no-go decision making approach to try and de-risk that process and accelerate the commercialization roadmap,” Ganz said.

One of the areas receiving particular attention is GLP-1 treatment and obesity care. Cornucopian recently led a $15 million Series A investment in Ilant Health, a clinician-led platform that uses proprietary algorithms and AI-driven analytics to personalize GLP-1 treatment.

The objective is not only to manage medication use but also to determine sustainable long-term strategies for patients and demonstrate economic value to employers and healthcare payers.

Ganz said the long-term effects of GLP-1 use, including potential skeletal muscle loss, remain important questions for the sector. He believes personalized care could help determine how patients manage obesity and metabolic health without depending exclusively on GLP-1 medications over the long term.

Another key investment area is biosensing. Cornucopian sees an opportunity to expand health monitoring beyond the current generation of wearables by measuring a broader range of biological indicators in real time.

Continuous glucose monitoring was an early breakthrough, but Ganz expects technologies measuring ketones, lactate and other biomarkers to become increasingly important.

The firm is also investing in Persperion, a company developing a non-invasive sweat sensor designed to measure glucose in real time. According to Ganz, users can place a finger on the sensor for 15 to 20 seconds to obtain a glucose measurement.

Precision nutrition is another part of the strategy. Ganz highlighted Caffree, a company he cofounded that uses an engineered enzyme to convert caffeine into theobromine. The technology can perform the conversion in approximately 20 to 30 minutes, compared with several hours in the human body.

For Cornucopian, these investments point toward a broader transformation in healthcare. The firm evaluates more than 1,000 companies a year and is particularly interested in technologies that combine scientific innovation with scalable business models.

“I still truly believe the addressable market is the total protein market,” Ganz said when discussing the broader evolution of health technologies. His vision extends beyond traditional categories toward a healthcare ecosystem in which AI, biotechnology, biosensing and personalized care work together to prevent disease and improve long-term health outcomes.

According to AgFunderNews, Cornucopian's strategy reflects a broader shift in healthcare investment toward technologies capable of delivering measurable outcomes while reducing costs and expanding access to personalized treatment.
