The California startup says its fermentation-derived emulsifiers could replace synthetic and palm-based food additives at competitive costs

California-based startup Ruby Bio plans to launch a new generation of fermentation-derived clean-label emulsifiers in 2027, aiming to replace synthetic additives and palm-oil derivatives commonly used in processed foods. According to AgFunderNews, the company says its platform could offer lower-cost, consumer-friendly alternatives for food manufacturers seeking cleaner ingredient labels.

Ruby Bio, founded in 2022 by CEO Charlie Silver and CTO Pavan Kambam, is developing emulsifiers produced through fermentation using non-GMO yeast strains licensed from the University of California Davis.

According to AgFunderNews, the company claims it may be the only startup currently building a full portfolio of fermentation-derived emulsifiers designed for large-scale food production.

The technology arrives as food companies face increasing pressure to remove ingredients perceived as artificial or linked to ultra-processed foods. Common emulsifiers such as DATEM, PGPR, polysorbates and mono- and diglycerides are approved globally, but many brands are looking for cleaner alternatives that sound more natural to consumers.

Ruby Bio also aims to reduce dependence on palm-oil derivatives, which have faced criticism because of deforestation concerns and tighter environmental regulations.

The startup says one of its biggest advantages is production efficiency. Unlike many fermentation processes that require expensive downstream processing, Ruby Bio’s yeast secretes emulsifiers outside the cells, simplifying recovery and reducing costs.

“We stop the fermenter, let it settle, decant from the bottom and remove any residual water. That’s literally our downstream process at scale,” CTO Pavan Kambam said, according to AgFunderNews.

The company explained that downstream processing can represent up to 70% of production costs in biomanufacturing, making simplification critical for commercial viability.

Ruby Bio also says its platform can use low-cost feedstocks such as crude glycerol, dairy lactose side streams, waste molasses and agricultural residues. The startup recently joined California’s BEAM Circular Accelerator to test feedstocks including almond and walnut shells.

Another key milestone announced by the company is achieving production titers above 100 grams per liter at small scale, something Ruby Bio believes brings cost parity with conventional emulsifiers within reach.

CEO Charlie Silver told AgFunderNews that matching the price of synthetic emulsifiers has been a core engineering objective from the beginning. “This milestone puts that target within easy reach at commercial scale,” he said.

Beyond emulsifiers, Ruby Bio is also developing fermentation-based polyols and sugar alcohols such as xylitol, erythritol, mannitol and arabitol.

According to the company, arabitol could become a promising low-calorie sweetener ingredient with potential microbiome-related benefits. Ruby Bio claims the compound has not yet been produced commercially at scale.

The startup says it has already tested its ingredients in products including bakery items, beverages, sauces, dressings and ice cream formulations.

On the regulatory side, Ruby Bio plans to submit multiple GRAS filings covering different strains and products within its portfolio. The company expects its first commercial launches to happen in 2027 following initial regulatory approvals.

To accelerate expansion, Ruby Bio intends to work with contract manufacturing partners. The startup has already validated its process at a 5,000-liter scale and plans to move toward 200,000-liter production systems.

The company has raised approximately $8 million from investors including Nucleus Capital, The Venture Collective and Transitions First.

As demand grows for cleaner labels and more sustainable ingredients, Ruby Bio is positioning itself at the intersection of FoodTech, fermentation and alternative manufacturing, targeting a global market increasingly focused on transparency, sustainability and cost-efficient production.
